Christmas Bacon Wrapped Stuffed Turkey Breast for 2

Local Ontario boneless skin on turkey breast (1kg) is stuffed with our Sausage Apricot & Apple Stuffing then rubbed with our fresh herb butter compound and then wrapped in thick smokey bacon for extra flavour and juiciness.  Easy to carve, tender and moist - this turkey breast is perfect for 2-3 with left overs.  Arrives frozen - thaw in refrigerator for 2-3 days prior to roasting (comes with full instructions).

Ingredients - turkey breast, stuffing (pork sausage, whole-wheat bread, onion, celery, apricot, apple, milk, parsley, seasonings, salt, pepper), bacon, butter, herbs, salt, pepper

Roasting Instructions:  Follow our cooking times chart for best estimate, and be sure to use a meat thermometer to ensure the final internal temperature reaches 170F.  Turkey breast is frozen.  Remove from freezer and thaw in refrigerator 2-3 days prior to roasting. 

Remove the turkey from the refrigerator 30 minutes prior to roasting.  Preheat the oven to 375F.  Line a baking sheet with aluminum foil and place an oven-proof rack over top. Spray the rack with nonstick cooking spray. Remove the turkey breast from the packaging and place on the sprayed rack. Roast for about 1 hour and 15 minutes, or until an instant-read thermometer inserted into the thickest part of the roll reads 160°F. Remove the turkey from the oven and let rest, loosely tented with foil for 15 minutes. The turkey will rise in temperature as it rests to 170°F.  Transfer the breast to a cutting board and slice into 1/2-inch thick slices and arrange on a platter.  NOTE:  Under the bacon there is one round of butcher twine holding the breast roll together.  Snip off and discard prior to serving

While turkey is resting, strain pan juices into our Turkey Gravy (if you have) and gently reheat in a pot on low on stove top.
