Holiday Pork Wellington with Caramelized Apples & Onion


A show stopper of a main course for the holidays or any dinner party!  A whole juicy pork tenderloin is topped with caramelized apples and onions then wrapped in flakey puff pastry.  Decorated for the season with pastry stars, this main course is ready to bake from frozen alongside the accompanying apple halves.  Ready in 75 minutes from frozen.

Ingredients:  Pork tenderloin, Puff Pastry (flour, vegetable oil margarine (contains palm and modified palm oil, soy lecithin, annatto, turmeric), Water, Salt), apples, onion, unsalted butter, brown sugar, sage, salt.  Egg wash (egg, water)

Heating Instructions:  Preheat oven to 375F.  From frozen, remove lid and turn apple halves skin side down.  Option to brush pastry with additional egg wash (egg beaten with 1 tbsp water) prior to roasting.  Place pan, uncovered, in the preheated oven for 45-60 minutes or until pastry is golden and internal thermometer reaches 145° F.  Remove from oven and let sit for 5-10 minutes before slicing.  Please note the oven temperatures vary so start checking doneness after 45 minutes.  Roast can easily rest for up to 30 minutes.

To serve - slice roast into 2" slices and serve with roasted apple half and a drizzle any pan juices over.

Serving Tips:  For the main 4 portions, serve the middle cut slices and use the end slices as seconds or left overs as these will contain the smaller "tail" portion of the pork tenderloin!
